Linguiça de Portalegre PGI

Description: Linguiça de Portalegre PGI is a smoked sausage comprising meat (leg, shoulder blade, loin, belly, intercostal muscles and trimmings with some fat) and hard fat, free of rind, of Alentejana breed of pigs, with added salt, dry ground garlic, sweet pepper, red pepper paste and sometimes white wine of the Portalegre region.

Linguiça do Baixo Alentejo PGI

Description: The Linguiça do Baixo Alentejo PGI is a smoked sausage made from 70%-80% meat and 20-30% fat of the Alentejana breed of pig. The meat is seasoned with paprika, salt, dried, minced garlic, pepper, crushed cloves and the local white wine.

Farinheira de Portalegre PGI

Description: Farinheira de Portalegre PGI is a smoked sausage comprising fresh fat of Alentejana breed of pigs, accounting for not less than 45% of the total ingredients, and wheat flour, with added salt, dry ground garlic, pepper and red pepper paste.

Farinheira de Estremoz e Borba PGI

Description: Farinheira de Estremoz e Borba PGI is a smoke-cured sausage, shaped like a horseshoe with 8 to 15 cm in length and 2 to 4 cm in diameter, made with soft fat from the meat of Alentejana breed of pig added with wheat flour (at a ratio of 40% fat to 60% flour), salt, water, ground pepper and dried garlic cloves. It has a yellow-orange colour, smooth and unshiny, with a semi-soft to pasty consistency. It has a pleasant smell and flavour, mild, garlicky, smoked, with a balance between sweet and salty. The fat is aromatic with a pleasant flavour and the texture is low in fibre and very smooth.
