Optionally, cloves, pepper, chili, bay leaf and nutmeg can be used. The outer coating is greased with a mixture of red pepper paste and vegetable and/or animal fat.

Descrição: A Linguiça do Baixo Alentejo IGP é um enchido constituído por carne e gorduras rijas obtidos a partir da desmancha de carcaças de porcos de raça Alentejana (Sus ibericus) cujos progenitores estejam inscritos no Livro Genealógico Português de Suínos - Secção Raça Alentejana, fumado basicamente com lenha de azinho. Aos pedaços de carne e gordura são adicionados, sal, massa de pimentão, alhos secos pisados, vinho branco da região, cravinho em pó, colorau e pimenta. O invólucro utilizado é tripa natural salgada de suíno (intestino delgado). A transformação, maturação, corte e acondicionamento da Linguiça do Baixo Alentejo IGP têm lugar na área geográfica adiante delimitada.
