Cabrito do Alentejo

Description: The Cabrito do Alentejo PGI meat is obtained from animals of Serpentina breed or from a kid resulting from crossing with father from Serpentina breed. It differs by its organoleptic quality, including palatability, tenderness and juiciness, and it is possible to establish a positive correlation with the concentration of linoleic acid (CLA) present in the fat of Cabrito do Alentejo IGP. Commercially, it comes in whole carcasses, halves, quarters or any portion, chilled or frozen, is obligatorily packed (except in the case of whole carcasses and halves) and properly labeled.

Production method: The animals feed essencialy on the spontaneous vegetation found in the commons, uncultivated and fallow lands. The kids are fed on maternal milk and are slaughtered before weaning, which occurs between the 30th and 120th day of age. The carcass must weigh between 3,50 and 7,50 kg.

Special features: The specific quality of the Cabrito do Alentejo PGI meat is closely related to the quality of goat´s milk. The quality of milk is resulting from mother's diet, which is varied and completely natural.

Production area: The production area of Cabrito do Alentejo IGP includes the districts of Portalegre, Évora and Beja and part of the municipalities of Grândola, Álcacer do Sal and neighboring areas.

History: The features of Caprina Serpentina breed and their own management techniques typical from the Alentejo region as well as its perfect adaptation to the existing agro-ecological conditions, contributed to the Cabrito do Alentejo IGP stand out and differentiate by the specific nature of the organoleptic quality of its meat, setting up, over time, as a gastronomic value shown, especially in the two seasons in which it has greater consumption: Christmas and Easter.
