Particular characteristics (signs that highlight the uniqueness of the product): Soup made with the bones of the pig's head, whose gelatinous steak that surrounds the bones, after being cooked, gives it a soft taste.

Ingredients used: Potatoes, cabbage, carrots and pig's head bones.
Preparation: The day before, leave the bones in a bowl of water seasoned with salt, so that they lose their blood.
Then, boil the bones in plenty of water until the fever, which surrounds them, comes loose.
Then, strain the cooking water, to remove all the bones and flaws that may be found in the broth.
Know-how: This broth is brought to the heat and potatoes and carrots to crush with a fork after cooking. Add Portuguese cabbage, tattered cabbage and a little skein pasta.
After everything is cooked, add the shredded meat and serve hot.
Note: According to the taste of each one, this soup can be more or less consistent, initially adding more water to the broth from cooking the bones.
Forms of commercialization: Not commercialized. It is only made by the families, individually.
Product availability throughout the year: It is found in butchers.
Product history: The soup from the bones of the head was made, in all pig slaughters, the day after the dismantling of the pig (3rd day). It was eaten at night, by the whole family, guests and the "matador".
Representativeness in local food: Nowadays, it is consumed in houses of rural tradition and in situations of recreation of the "matadela do porco".
