Cabrito de Barroso IGP

Description: The Cabrito de Barroso IGP meat comes from kids of the Serrana and Bravia breeds, and their crossings, raised and slaughtered within the region. It is reddish meat, very juicy and with a distinctive flavor. Commercially, Cabrito de Barroso IGP can be presented in carcasses or half carcasses. The carcass includes the head, liver, lungs, heart and kidneys. Cabrito de Barroso IGP can only be sold in licensed establishments.

Production method: The animals are raised in extensive farming conditions, essentially in free grazing. In the dead of winter the animals can be occasionally stabled, being then fed only hay, birch or willow leaves and dried ferns. The kids are mainly fed on maternal milk. They are slaughtered at the age of three months, remaining until then with their mothers.

Special features: The specificity of the Cabrito de Barroso PGI derives essentially from the way it is created and fed, in harmony with the local natural resources. The kid is part of the culture and gastronomy of the region. According to Father John Martins Rodrigues, "the kid, being also for sale, is a rare and luxurious delicacy. It is prepared for special celebrations: baptisms, weddings, patron saint festivities, or when receiving the priest, guards, friends from the village and lords from the neighborhood".

Production area: The Cabrito de Barroso IGP production área – roughly 2150Km2 – encompasses the municipalities of Boticas, Chaves, Montalegre and Vila Pouca de Aguiar.

History: The Terras do Barroso has a long tradition in goat rearing, with a cooperative system of production deeply rooted in the traditional know‑how of the northern mountainous areas. This rearing takes advantage, since ancient times, of the remote mountain’s native flora, generally inaccessible to other livestock species. Although there are historical accounts of the existence of a Barrosã breed, migration flows and changes in livestock lead to its disappearance and replacement by the Bravia and Serrana breeds.
