Description: Stiff bread in pieces or slices mixed alternately with layers of cabbage.

Special characteristics: It is an optimal use of the chanfana sauce, which is never fully consumed. Since it is very tasty and rich, not only in fat but also in meat juices, it would be a shame to waste it.

Species, varieties or breeds (of associated animals): Savoy cabbage or troncha.

Additional information about species, varieties, breeds: Savoy cabbage and troncha are highly appreciated in the Beiras, where they grow very well. They must be caught very early to preserve all their vitality.

Connection to the natural landscape: Every peasant had and has a vegetable garden where these types of cabbage continue to be grown.

Ingredients used: Cabbage, bread, salt, chanfana sauce.

Preparation: Cook the cabbage, preferably lombard or troncha. In a clay pot, a layer of boiled cabbage is arranged, a layer of sliced bread and so on until you end up with the cabbages. Pour the heated sauce of the chanfana on top. Go to the hot oven to refine and toast a little.

Product availability throughout the year: Permanent in specialized restaurants.

Product history: Associated with Chanfana, the wedding soup is based on the natural use of field products, namely cabbage, bread made by the farmer's wife and chanfana sauce. It was served primarily on the days of the wedding or wedding of the village.

Representativeness in local food: It was a fundamental element in supporting the people's food, particularly on festive days, such as the wedding day. Either because of the ease of availability after cooking, as it only takes a few minutes of heating to meet the conditions to be served, or because of the simplicity of the products it requires.
