Description: The figs of the regional variety called Cotio, dried in the sun or roasted in wood ovens, and can also be flavored with fennel, are opened in the shape of a star, carrying almonds on the tips. Dark golden color, due to the roasting of the fig. They are about 4 to 5 cm in diameter.
Region: Algarve.
Other denominations: Fig Stars with Almonds.
Particularity: Flattened and roasted figs, with almonds at the ends.
History: When fig and almond trees were introduced in the Algarve, in a consortium and because their fruits have a long shelf life, they soon became a privileged food during the periods of food shortage, that is, in winter. To be more pleasing to the palate and because the popular imagination is fertile, these two products began to be worked on in the most diverse ways and one of them is, without a doubt, the presentation of Fig Stars. Café Arcada, founded at the be-ginning of the century, sold Fig Stars which, according to ancestral customs, he ordered from the region's confectioners.
Use: Traditionally they were made and consumed for All Saints' Day. Currently, they are prepared and sold throughout the year.
Know-how: The flattened figs are given four strokes, from the end of the fig to the center, so that they can be opened in the shape of a star. Put an almond on each end and cover it with another fig also cut. Place them on trays and take them to the oven to toast.
