Sardinhas Doces de Trancoso

Description: Sweet made from eggs, grated almonds, olive oil, chocolate, sugar, salt and cinnamon. They have a length ranging from 13 to 16 cm and a weight of 120 to 150 g. The head and tail of the sardine are wrapped in chocolate.

Region: Center.

Particularity: Fried jam, in the shape of a sardine, where the head and tail are clearly visible, dark in color (cocoa brown). They have a relatively crispy pastry crust and an inner filling of yellow egg colour, pasty and of medium homogeneity. They are very sweet.

History: It is a sweet of conventual origin. It is a specialty referenced in gastronomic guides. Francisco Hipólito Raposo does not forget to remind people who are going to visit this land, to taste the Sardines of Trancoso.

Use: As a treat, at any time of the day.

Know-how: The flour is kneaded with olive oil and water to form a topping dough. The filling is made with the sugar, eggs and almonds. The filling is wrapped in the dough, it is shaped like a sardine, fried in oil, passed the ends in hot chocolate and then sugar and cinnamon.
