Description: Cakes made from wheat flour, eggs, sugar, salt and baker's yeast. Its interior appearance is porous and coarse. They are about 7 to 9 cm in diameter and weigh between 30 and 40 g.
Region: Center.
Other denominations: Sugarcane Honey Cake.
Particularity: Small cakes with a circular, convex shape, quite flattened, with a relatively crispy crust and easy disintegration when cut. They have a faint-yellow colour inside.
History: It is a regional product, typical of the area. The origin of its production cannot be established exactly, as even the oldest people in the region remember having always consumed Forgotten Guarda.
Use: As a food, especially of a regional nature, as they should be consumed before one month after their manufacture, as they have better organoleptic characteristics.
Know-how: Mix the eggs with the sugar and beat well. Add flour, salt, yeast and enough water to knead. Then let it rise and tend balls that are baked in a wood oven. The temperature of the oven has an influence on the final appearance of the product.
