Description: The Escarpiada de Condeixa-a-Nova is a sweet cake, made with bread dough, brown sugar, olive oil and cinnamon.
Special features: The cake contains, inside, a sauce resulting from melted sugar with cinnamon, which gives it a unique character.

Ingredients used: Bread dough, brown sugar, olive oil and cinnamon.
Preparation: After the bread dough is sour, take a portion and spread it out on a table with flour. After it is well flattened, it is greased very well with olive oil and spread on top, brown sugar and cinnamon, pressing well. Wrap the dough with the flaps inwards, very tightly tightened, always putting, after each fold, a layer of sugar and cinnamon. Finally, add a little more olive oil, sprinkle with sugar and cinnamon and bake.
Know-how: The way the dough is folded is essential so that the sauce resulting from the melted sugar with the cinnamon does not come out.

Product history: It is not known when the Escarpiada de Condeixa-a-Nova began to be made. Its origins can be linked to the presence of the Romans in Condeixa. On the other hand, in medieval times bread dough also appeared with other gastronomic uses, namely boleira, a cake to which sugar and cinnamon were added. The recipe has been passed down, orally, from generation to generation. In the first half of the twentieth century there was a bakery that made Escarpiadas to order, and later, in the second half of the century, all the bakers in the village produced them.
Representativeness in local food: The Escarpiada de Condeixa-a-Nova has always had a great importance in the village: it was consumed mainly during festive moments, that is, in the festivities of Santa Cristina, Passos, Easter or Christmas.
