Special characteristics: «Milhos de Ribeira de Pena» have a homogeneous, creamy and consistent texture, and are traditionally consumed by harvest. Its colour varies between light yellow and golden, resulting from the cooking of crushed white corn in rich meat broth and sausages.
The aroma is intense and characteristic, highlighting the notes from the cooked corn and the broths used in the preparation. The flavour is rich, persistent and harmonious, reflecting the slow integration of the different ingredients during the cooking process.
One of the distinctive characteristics of this specialty lies in its traditional form of presentation, with the corn served in its own container and the meats and sausages presented separately, allowing each diner to combine the different elements of the dish according to their preference.
According to local tradition, different variants of the speciality are distinguished, known as «Milhos Esfuçados», prepared with pork and smoked meat; 'Corns Esgorados', accompanied by beef; «Esgravatados Milhos», when they include chicken meat; and «Milhos Ricos», the most complete version of the specialty, which brings together pork, veal, chicken and traditional sausages, namely salpicão and chorizo.
History: The origin of the «Milhos de Ribeira de Pena» is deeply linked to the rural way of life of the communities of the municipality. For generations, maize has been one of the pillars of local food, being produced on small family farms and valued for its ability to feed large families and sustain agricultural work throughout the year.

The composition of the dish often varied according to the resources available in each house, giving rise to the different variants that are still part of the local gastronomic memory today.
More than a simple recipe, the «Milhos de Ribeira de Pena» represent a cultural legacy transmitted between generations. Its confection has traditionally been associated with moments of family sharing, festivities, community celebrations, meetings between neighbors and other occasions of conviviality that marked the social life of the villages of the municipality.
Over time, this specialty has consolidated itself as one of the most genuine expressions of the gastronomic identity of Ribeira de Pena, remaining present in local restaurants, in initiatives to enhance the food heritage and in various events dedicated to the promotion of the culture and gastronomy of the territory.
