Description: Crustacean of the species Scyarides latua (locust lob-ster tobater).
Region: Autonomous Region of the Azores.
Particularity: Crustacean similar to lobster, but smaller and tastier.
History: According to oral testimonies, in the past Cavacos existed in large quantities but were not much appreciated as food. They therefore did not fetch very high prices on the market, and were even, it seems, used as bait for fishing. In recent years, and contrary to tradition, Cavacos have become highly appreciated, and their price has risen according to demand.
Use: They can be eaten like lobsters, as a main course or snack.
Know-how: Cavacos are fished by divers who catch them by hand or through baited "safes". They are caught by professional fishermen or amateurs on all the islands. Capture is prohibited in the period between May 1 and August 31, in order to protect the species.
