Description:
Delimitation of the geographical area of production: Coastal area of Figueira da Foz.
Ingredients used: 12 sardines; 2 onions; 2 tomatoes; 1/2 peppers; bay leaf; 250 g of rice; olive oil; 1 dl of dry white wine; water; 1 chilli; salt; 1 bunch of parsley; 1 clove of garlic.
Preparation: Cook the sardines, remove the scales, wash them very well and sprinkle with salt. In a clay pot or pan, pour olive oil, chopped onion, parsley, chilli broken in half, pepper, tomato without skin or seeds and white wine. Let it cook without scorching, add a little water and, after everything is well cooked, add the sardines, which should only bring a slight boil. Remove the sardines and, if necessary, add more water, which is essential to open the rice. After adding the rice when it is almost open, place the sardines on it again. Let it cook and serve it very hot. When serving, squeeze lemon over the rice or sprinkle with wine vinegar.
