Dom Rodrigo do Algarve

Description: «Dom Rodrigo do Algarve» is a lightly toasted sweet with a golden-brown tone, sprinkled with cinnamon and in the shape of a ball. It is wrapped in parchment paper and colored metallic paper, in a pyramidal shape or crumpled shape.

Production method: «Dom Rodrigo do Algarve» obtained by joining egg threads with a mass of ovos moles, almonds, cinnamon and sugar syrup. The balls of the jam are placed on the fire in a frying pan, to toast directly in the syrup where the egg threads were cooked. The use of industrial caramel is not allowed.

Special Characteristics: «Dom Rodrigo do Algarve» is distinguished by the non-use of liquid caramel and by the burning of the jam in a frying pan.

Production area: All municipalities in the administrative district of Faro.

History: «Dom Rodrigo do Algarve» is one of the most famous sweets in Algarve sweets, and is also an essential part of the Algarve's culture and gastronomic identity. Its origin is associated with the city of Lagos, with the figure of the governor and captain-general of the Algarve, D. Rodrigo de Menezes, from whom it inherited its name, being particularly relevant. The recipe that served as the basis for the current version originated in the Convent of Nossa Senhora do Carmo de Lagos, having been transmitted, in the nineteenth century, to a local family. Since then, the artisanal confection of the sweet has been carefully preserved and passed down from genera-tion to generation.
