Definition of the geographical area of production: Santa Maria Island, Azores.
Ingredients used: Preparation: unique, crunchy, with a divine taste, they inebriate us with the smell of "the world". Made from a kneaded dough of flour, eggs, sugar, salt and butter, lard and brandy, it is kneaded without water, with hands greased with butter, in a bowl also greased with butter, they owe the characteristic "crunchy", to the generous amount of eggs and the glass of brandy, well kneaded in the kneading, without rest. They are individually tended, removing small portions of dough, stretching it and joining the ends, enter a live oven, as for baking bread, in buttered trays.
Forms of commercialization: They can be purchased in food stores and local handicraft stores.
Year-round product availability: Available year-round.
Other designations: Cory's Shearwaters. This term has to do with the predominant bird on the island, the Cory's Shearwater, and be-cause for many years it has been included in the diet of the inhabit-ants of Santa Maria.
