Pão de Ul - Pada de Ul

Description: Ul bread/Ul pada is a traditional wheat bread, in the shape of a "pada", obtained manually by joining two small rounded pieces of dough; when two padas, in the shape of a coarse square, are joined, it is said that a "row" has been formed. Ul bread/Ul bread is a well-cooked, homogeneous coloured bread, with a floury appearance, without shine, with little salt and absence of unpleasant colours, aromas and flavours. It has a slightly hard and not very crunchy crust, firm, with a crispy-white color and a white crumb, soft and not very elastic with medium-sized cells, distributed homogeneously. The home is little marked and not very thick, if the bread is less cooked, thicker if the bread is more cooked. It has a pleasant, bread-like odor and a pleasant taste, little salty and little bitter. UL bread retains these sensory characteristics for 8 to 12 hours after baking, but can be consumed beyond that period. It can also be produced in a smaller format, called "padinhas".

Special Characteristics: The unique characteristics of Ul bread/Ul pada are essentially and combined with the production method, deeply rooted and traditionally used since ancient times, the use of the wood oven, providing unique, differentiated and specific characteristics that are repeated over the centuries and the location of the production facilities, in the vicinity and banks of a watercourse.

Production area: The geographical area for the preparation of Ul/Ul bread is limited to the parish of Ul, in the municipality of Oliveira de Azeméis, and to a 500-metre-wide strip that borders the bank of the Antuã River, in the parishes of Macinhata and Travanca, in the municipality of Oliveira de Azeméis. This delimitation takes into account the historical location of the wood ovens in UL and in the area bordering the Antuã River.

History: Ul's bread or pada is a traditional product, whose origin and know-how have been maintained over several generations of bakers. Closely linked to its hydrographic reality, the abundant water of the rivers was omnipresent in the economic life of this region, since, thanks to the force of the waters, numerous water mills on both banks ground flour which, in turn, gave "food" to another complementary activity, that of the manufacture of the very famous Ul bread.
